Welcome to Pyin U Lin, a mountain station town that was once home to many British ex-pats. It is cool here, and very laid back. If you take the train from Hsipaw you should arrive in late afternoon. After taking a horse taxi (see later picture), you should have time for a nice little evening stroll before the sun goes down (this of course, only if your train is actually on time). I would then advise staying one more full day and then taking a morning pick up down to Mandalay (if you are going north to south).
